Hawaiian One Pan Pasta

Hawaiian pizza is one of our favorite pizza flavors, so I couldn’t resist giving this a Hawaiian pizza twist. Not only do I use that leftover Jones Dairy Farm Ham, but I throw in some of my favorite bacon from Jones Dairy Farm, because everything is better with bacon. A little bit of sweet from the pineapple, and melty mozzarella cheese on top puts this one pan pasta as one of my very favorites. We seriously loved this so much that I made it twice in one week!

Bacon Parmesan Gougeres (Cheese Puffs)

I have recently discontinued the hot food and snack meal plan at my son’s pre-school because he just didn’t eat and completely wasted the food on a daily basis. As a result, I have been packing lunch box and snack for him every day. For his snacks, I have been baking simple breads and cheese puffs for him, for example: cheesy garlic bread, mini monkey bread, gougeres or French cheese puffs, Brazilian cheese bread, choux pastry, etc. All these snacks are so easy to make and I can make them in a jiffy without baking up a storm in the kitchen. More importantly, we love all those breads and puffs!

I am so not a morning person. I really, really, really want to be, but it does not appear that is in my character to be my best self in the wee hours of the morning. I need time in the morning to wake up, even after I have been out of bed for awhile. I like my days to start slowly. Which is kind of funny because I live in a house of early risers that are ready to go the moment their eyes open. I like to head downstairs, watch a little Today show, and after about 20 minutes, I am okay to start the day. I am very lucky that my husband feeds the kids breakfast before he heads to work, so I am only responsible for feeding myself. In my half-awake state it is highly unlikely that I would a.) make myself a breakfast that involved much effort and b.) do dishes.

My first grader was home from school for the President’s Day holiday, but his younger brother still had preschool this morning. It was a rare opportunity to eat lunch with my biggest big boy in the absence of his 4-year-old best friend and biggest competitor for attention. So there we were, peacefully crunching away on our apples, when my son exclaimed, “Ouch! My tooth hurts!
He was holding a front bottom tooth, and one thing instantly popped into my head. Sure enough, upon inspection, my suspicions were confirmed.

Classic Italian Meatballs

If you were to ask my 2 sons to list the most memorable foods they ate while growing up, meatballs would likely be at at the top of the list. You see, Grammy (my mom) managed an Italian restaurant when they were young. Their favorite food there was meatballs.

It became a tradition to eat meatballs whenever Grammy was around. Even for breakfast. Seriously. Want some evidence? Here is a photo of Brackenthebox in 1987 (he was 5). He and T-Man had a slumber party at Grammy's, and their doting grandmother served them breakfast in bed while they all watched cartoons on TV (pretty much heaven for 2 little boys). Breakfast menu: French toast, cantaloupe, and...MEATBALLS! I believe the caption for this photo is, "Mmmmmmmm...!"

Healthy Avocado Chocolate Cookies

For a long time I’ve been wanting to try making some 100% healthy cookies. Not just like those you find, where the sugar has been replaced with sweeteners or half of the butter replaced with canola oil. Seriously? Should fake un-natural sweeteners be healthier than usual sugar? Well, I get stevia since it is still natural, but I really don’t think those chemically produced sweeteners are good for you. Still, white sugar isn’t really healthy I know. My solution? I always try to go for other kinds of sweeteners – natural sweeteners to be exact.

Usually I end up using honey or maple syrup, but this time I tried something new (well, almost new – I used it in my healthy chocolate granola as well): Coconut Sugar.

This is an easy, excellent chopped Mexican salad. Mexican salads have a way of reviving your taste buds with all of the fresh lime juice and cilantro (and if you don’t like cilantro, keep reading!). I discovered this salad through my cousin’s wife, Alla, on our recent trip to WA. I couldn’t wait to make the salad when we got home.
